Goat Cheese Stuffed Chicken Breast

Okay, here's my confession - I love chicken breasts.  I know they aren't as full of flavor as some other parts of the bird.  I also know they have a tendency to be dry.  But they're so meaty and delicious if done right!  A number of my off-the-top-of-my-head meals include chicken breast (chicken in a "bag" with steamed vegetables, to name just one).  So last night when I started thinking of something that would go with the rest of the HUGE Greek salad I had left, I thought of doing something with a chicken breast.

I bought a whole breast (if I'm roasting it, I greatly prefer the breast to have both bone and skin - even if I don't eat the skin...it's all about flavor).  I preheated the oven to about 350, and then loosened the skin all over the breast with my fingers.  And then I stuffed probably 2 ounces of Mediterranean-herbed Goat cheese under the skin on each side of the breast.  A little olive oil, salt & pepper on top, and into the oven for about 45 minutes.

The breast came out juicy, with a crispy skin.  And the herbs in the goat cheese added a PUNCH of flavor.  The perfect addition to the Greek Salad.

  3. I made the chicken and the Greek Salad on Wednesday. The were both wonderful! We had the leftover salad last night with some steaks. There was just enough salad left for about one serving. So, I put it into a smaller container and hid it in the vegetable drawer in the refrigerator so I could eat it for lunch at work today. So last night before we went to bed my husband Joe asked if there was any salad left because he was hungry. I'm not a good liar, so I didn't even look up from the book I was reading when I said "No, we ate it all for supper." I feel a little guilty now. Since Mother Nature has decided it is still winter here in Nebraska, maybe I will make the potato soup this weekend and let him have the last bowl.

  4. Barb - you're too much. I absolutely LOVE that you hid the rest of the salad from him. That's hilarious. And I'm glad you enjoyed it. The bread chunks was a new addition for me but I really thought they added something special. And so glad the chicken worked out as well. It's rich and succulent.

    Joe called me yesterday while I was shopping and said "we should have those chicken breasts again."
    After figuring out which chicken breasts he was talking about, I directed him here because I couldn't remember what kind of cheese I needed. When I got home he asked when we were going to have the potato soup (I never got around to making it) that I was going let him have the last bowl of since I HID THE GREEK SALAD FROM HIM. Lol. It was funny. I completely forgot that I told you about that. This is what happens when you lie, kids! And when you talk to much, which I apparently do!!
